Not Popovers

Alternately titled, “Haphazard Cooking” and “Custard Spongebread”

I watched a tv pop over recipe yesterday at Grandma Zuzu’s house.  It looked easy enough and delicious.  I didn’t have the right kind of flour though.  I didn’t have the recipe either.  I remembered what was in it though!  So I guessed.

4eggs

1.5 c flour

2 tsp vanilla

1 c sugar (+/-)

1 tbs soda

1tsp salt

2 big pinches cinnamon sugar

1.5 cups milk (+ a splash)

I mixed the eggs sugar and vanilla in one bowl.  In another I mixed the dry ingred.  I stirred those together then added the milk.  Set oven to 425 F.  Pour into baking cups, almost full.  (The idea was to make pop overs remember.)   Bake for 20 minutes.

When I went to check on them they were not popping but I tested in the center with a toothpick at 20 minutes and they were done!  Cooled on a plate and ate.  Delicious!  Taste likes custard.  Not overly sweet and perfect with a pat of butter.  And hot tea.  :)

Feeling sunny to partly cloudy

Our colds are lingering… It’s the added burden of allergies in combination, I know, but it doesn’t make us feel any better.

We had a wonderful Thanksgiving and want to thank you guys for coming over and bringing such delicious food and drinks.  All the leftovers have been duly devoured and I’m glad we won’t have to eat turkey for Christmas!

We’ve been decorating.  The tree is up and dressed, the tinsel festoons the windows and the lights glow in the night air.  Ahhh Christmas!  I love this wintry season.  I had forgotten how many paper crafts we made last year.  We pulled paper chains from the boxes of ornaments, little paper people holding hands, angels who’s wings touch and little paper Christmas trees.  We’ve put large sparkly ornaments on the tree in the yard and full and fat tinsel on the arbor, too.  We put two chocolate kisses in each drawer of the countdown calendar.  Now it begins… every day, upon waking, Fish asks, “How many days until Christmas?” 

“I don’t know, ” I respond, “check the calendar.”

“Mom there are 23 days until Christmas.”

“Oh, only that many?”

“Yes, mom, only 23.”

“Did you give Keek her chocolate.”

“Not yet!!!”  he yells as he runs out of the room to wake his sister.    It’s amazing how pleasant my night owl is when she wakes to chocolate!

Keek has started to make collages.  She loves to go through catalogs and magazines to make artwork.  cozycooking She made these two, day before yesterday, for the kitchen.  They are titled, Cozy and Cooking, respectively.

Fish has decided he doesn’t want to read anymore.  So we are on pause until further notice.  In the place or daily reading he said he would study spelling words because, “Spelling is easier than reading, anyway.”  These are his words for this week:  cat, can, car, call, ball, he, she, bird and tree.  His bonus word is; said.  On Monday he started writing each word three times and he finished them up today.  Then he spelled each word out loud.    He does seem to be enjoying himself, too.  I just don’t get it.  I really despised spelling… well reading too, for that matter!  Anyway, he’s happy and I’m happy!

We’ve continued with math, too.  Keek is working on multiplication tables (to 12) and Fish is skipping through site subtraction.  i.e.  25-5=20    33-2=31  Ho hum.  I wish I knew how to make math less mundane.  Both kids have been helping in the kitchen and cooking math is great.  But even that gets old quick.  They’ve been practicing with money, counting what they save and what they spend.  They’ve recently become aware of the movie prices.  Now they know the theatre only costs $1.50 a person so they are always volunteering to take us to the movies.  They’ve learned that Wendy’s and McDonalds have Dollar menus and Taco Bell has food for even cheaper!  So requests to go out to eat have doubled, “I’ll pay for my food with my own money!” they chorus!  Dollar Tree is a favorite and every time we drive by they are eager to spend spend spend.  Fish seems to have more money than Keek, day to day but I guess that’s becasue he just started spending.  Keek’s noticed too and is eager to have more money than her brother.  So a saving race has begun!  We’ll see how long it lasts!

Decadent Dessert for One (or two)

I got this recipe from a yahoo group I’m a member of.  It just seemed so enticing I had to repost it here!

CHOCOLATE CAKE-IN-A-MUG
1 coffee mug (large)
4 Tbsp. *cake flour (plain, not self-rising)
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. vegetable oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional

Add dry ingredients to mug, mix well with a fork.
Add egg, mix thoroughly.
Pour in milk and oil and vanilla, mix well.
Add chips, if using. (DO!)
Put mug in microwave, and cook for three minutes on 1000 watts.
Cake will rise over top of mug–do not be alarmed!
Allow to cool a little; tip onto a plate if desired.
Eat!

*Can use regular flour but a tad less.
PS Buy a can of your favorite frosting to have on hand, or top with your favorite ice cream.  Coffee?  Raspberry sherbet?

Spinach

Personally I love spinach.  I love it fresh.  I love it steamed.  I love it frozen.  Not particularlly fond of canned spinach but, in a pinch, even that’ll do.  So here are three of my favorite spinach recipes… in no particular order.

Family Sized Spinach Salad

1large mixing bowl of fresh spinach

boiled eggs (1 for each in attendance), cooled and peeled then crumbled

cranberries and or sunflower seeds *OR* walnuts and pumpkin seeds to taste

Mix it all up in the bowl and top with raspberry vinegrette dressing.  Mmm… so delicious!

It seems like so much about life has become instantaneous.  I don’t mind it, at all, heaven knows I am as impatient as anyone else!  And to that end I have made speedy enchiladas.  Not exactly instant but close enough.

On Demand Spinach Enchiladas

1 pkg frozen spinach (10 oz)

1 1/2 cups shredded taco or mexican cheese

1 can cream of chicken soup

2 tbs salsa (or to taste)

Mix all of the above in large mixing bowl.  Set in fridge and wait for hunger pangs.  When hunger strikes remove from cooler.  On one tortilla scoop 1 to 2 tablespoons spinach mix.  Microwave until warm, approx 1 minute and 20 seconds.  Eat to abolish hunger pangs.

Spinach Dip

1 pkg frozen spinach (10 oz)

1/3 cup sour cream and 1/3 cup ranch dressing

*OR*

2/3 cup melted cheese and 3 tbs milk

Mix together spinach and chosen flavorings… then add salt and pepper to taste.  Eat with chips!

Soup’s on!

I love soup especially cream soups.

Here’s Potato and Mushroom cream soup… my very own recipe!
3 cups organic chicken broth
3 cups skim milk
1 giant heaping tablespoon sour cream
5 large baking potatoes
5 radish
8 oz mushrooms (sliced)
1/2 a purple onion (chopped)
2 cloves garlic (minced)
s&p to taste
3 tsp Italian seasoning (at least)

Bake potatoes in microwave. Get out the crock pot. Cut potatoes into bite chunks. Put everything in Crock pot. Cover and cook on high for 4 hours. Serve in bowls with cheese on top and crusty bread for sopping! Mmm Mmm Mmm! SO DELICIOUS!
